Country Style Ribs with Gravy

Country Style Ribs with Gravy are super easy to prepare with tender pull-apart pork ribs smothered with savory mushroom gravy and sliced onions all cooked in a slow cooker.

This recipe is moderately low-carb, but not necessarily by Keto extreme low-carb guidelines.

Ingredients

Salt and black pepper to taste

onion

sliced mushrooms

cream of mushroom soup

paprika

cornstarch

Substitutions

This recipe can also be made with a boneless pork roast or boneless port steaks instead of country style ribs.

How to make Country Style Ribs with Gravy

Step 1 – On a cutting board, cut the onion into slices and place them into the bottom of a 4 qt crockpot slow cooker.

Step 2 – Layer the country-style pork ribs on top of the onions.

Step 3 – Lightly sprinkle the ribs with kosher salt and black pepper.

Step 4 – In a bowl, stir together the cream of mushroom soup and sliced mushrooms.

Step 5 – Add the mushroom gravy over the pork ribs.

Step 6 – Sprinkle the paprika over the soup.

Step 7 – Cover and cook on the low setting for 8 hours, or on high setting for about 4 hours.

Step 8 – Remove the pork to a serving plate and keep warm.

Step 9 – Stir together the cornstarch and water.

Step 10 – Pour the cornstarch mixture into the liquid in the crockpot to thicken the gravy. Repeat these steps for thicker gravy.

Step 11 – Turn the slow cooker to the HIGH heat setting and continue cooking for about 3-5 minutes or until gravy is thickened. Serve and enjoy.

Ingredients

  • 2 country-style pork ribs (about 1/2 lb)
  • Salt and freshly ground black pepper to taste
  • 1 onion
  • 4 oz sliced mushrooms
  • 10.5 oz cream of mushroom soup
  • ¼ tsp paprika
  • 1 Tbsp cornstarch (+ additional if needed)
  • 1 Tbsp cold water (+ additional if needed)

Instructions
 

  • On a cutting board, cut the onion into slices and place them into the bottom of a 4 quart slow cooker. Click for a 4 quart crockpot.

  • Lightly sprinkle the ribs with kosher salt and black pepper.

  • Sprinkle the paprika over the soup.
  • Cover and cook on the low setting for 8 hours, or on high setting for about 4 hours.

  • Stir together the cornstarch and water.
  • Pour the cornstarch slurry mixture into the liquid in the crockpot to thicken the gravy. Repeat these steps for thicker gravy.

What should I change if I want to add red potatoes and carrots?

Hi Lynn, I have not tested this recipe with red potatoes and carrots. If I did, I would add them to the crockpot with the onions in step 1 and then remove them with the pork in step 8 before making the gravy thicker. Enjoy!

My husband and I loved this recipe for short ribs in gravy. I plan to make it in my large crock pot for my daughter and family, when they visit, before Thanksgiving.

It came out great! I didn't have any mushrooms and I used cream of chicken instead of mushroom but it still came out fine. I also added some poultry seasoning and garlic.

Hi zona I saw a couple of recipes For smothered ribs and would Like to it as it is a way to Move away from the old barbeque Sauce style how ever I see here that you use a crockpot my question here is I don't have a crock pot so can this be done in The oven if so on what temp and for how long do you cook them

Hi Felicia, I have not made this in the oven but you can try this...

Place the ingredients into an oven proof dish. Preheat the oven to 325 degrees Fahrenheit. Cover the food with the lid or tightly sealed foil and place it into the oven. Bake in the oven for 2 hours, covered, at 325 degrees F. Then test the meat by putting a meat thermometer into the thickest part, away from the bone if there are any. If the meat is still not cooked at the end of the cooking time, add more time in 15-minute increments until the meat is thoroughly cooked.

Hi Judy, I do not dilute the mushroom gravy. After cooking in the slow cooker I thicken the gravy in steps 9, 10, and 11 like this:

9. Stir together the flour and water. 10. Pour the flour mixture into the liquid in the crockpot to thicken the gravy. Repeat these steps for thicker gravy. 11. Turn the slow cooker to the HIGH heat setting and continue cooking for about 3-5 minutes or until gravy is thickened. Serve and enjoy.

If you don't want to thicken the gravy you could skip these steps.
