BLT Macaroni Salad for Two - delicious side dish

In this easy and tasty BLT Macaroni Salad bacon, lettuce and tomato are mixed with a creamy delicious dressing. This small batch recipe is a great side dish and serves two or three people. You can use any pasta shape you prefer and this gorgeous cavatappi pasta is my favorite.

Cook the macaroni according to package instructions. Drain and cool completely. Click here for Cavatappi pasta.

 

While the pasta is cooking, fry the bacon until crisp. Once cooled, crumble into small pieces.

 

Dice the tomato and roughly chop the lettuce.

In a small bowl mix together the mayo, sour cream, vinegar, garlic powder, salt and pepper.

Toss the vegetables, bacon and dressing with macaroni until combined.

 

Cover and refrigerate until ready to serve.

Ingredients (Choose US or Metric)
  • 1 cup uncooked elbow macaroni
  • 1/8 cup mayonnaise
  • 1/8 cup sour cream
  • 1 teaspoon rice vinegar
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoons ground black pepper
  • 2 pieces bacon
  • 1 Roma tomato or 4 cherry tomatoes
  • 1/8 cup lettuce
Instructions
