Best BLT Macaroni Salad Recipe for Two

BLT Macaroni Salad

In this easy and tasty BLT Macaroni Salad bacon, lettuce and tomato are mixed with a creamy delicious dressing.

This small batch recipe is a great side dish and serves two or three people.

How to make BLT Macaroni Salad:

Cook the macaroni according to package instructions. Drain and cool completely. Click for Cavatappi pasta.

While the pasta is cooking, cut the bacon into 1 inch pieces and fry until crisp.

Roughly chop or tear the lettuce into small pieces.

Dice the tomatoes.

In a small bowl mix together the mayo, sour cream, vinegar, garlic powder, salt and pepper.

Toss the vegetables, bacon and dressing with macaroni until combined.

Cover and refrigerate until ready to serve.

Ingredients

  • 1 cup uncooked elbow macaroni
  • 1/8 cup mayonnaise
  • 1/8 cup sour cream
  • 1 teaspoon rice vinegar
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt
  • 1/8 teaspoons ground black pepper
  • 2 pieces bacon
  • 1 Roma tomato, or 4 cherry tomatoes
  • 1/8 cup lettuce

Instructions

  1. Cook the macaroni according to package instructions. Drain and cool completely. Click for Cavatappi pasta.
  2. While the pasta is cooking, cut the bacon into 1 inch pieces and fry until crisp.
  3. Dice the tomato and roughly chop or tear the lettuce.
  4. In a small bowl mix together the mayo, sour cream, vinegar, garlic powder, salt and pepper.
