BLT Macaroni Salad Recipe
In this easy and tasty BLT Macaroni Salad bacon, lettuce and tomato are mixed with a creamy delicious dressing. This small batch recipe is a great side dish and serves two or three people. You can use any pasta shape you prefer and I chose this gorgeous cavatappi pasta. Ready in 20 minutes!

- 1 cup uncooked elbow macaroni
- ⅛ cup mayonnaise
- ⅛ cup sour cream
- 1 teaspoon rice vinegar
- ⅛ teaspoon garlic powder
- ⅛ teaspoon salt
- ⅛ teaspoons ground black pepper
- 2 pieces bacon
- 1 Roma tomato, or 4 cherry tomatoes
- ⅛ cup lettuce
Instructions
- Cook the macaroni according to package instructions. Drain and cool completely.
- While the pasta is cooking, cut the bacon into 1 inch pieces and fry until crisp.
- Dice the tomato and roughly chop or tear the lettuce.
- In a small bowl mix together the mayo, sour cream, vinegar, garlic powder, salt and pepper.
- Toss the vegetables, bacon and dressing with macaroni until combined.
- Cover and refrigerate until ready to serve.
