Basic Ingredients

oatmeal
mozzarella cheese
Parmesan cheese
onion
salt
ketchup
egg
ground chicken
thick bacon
Substitutions
You can use panko breadcrumbs instead of oatmeal.
Swap out the ground chicken with ground turkey, or ground beef.
You can use grated Parmesan cheese instead of shredded.
Add Italian seasoning, kosher salt, garlic powder, and black pepper if you wish.

How to make easy Chicken Meatloaf
Preheat oven temperature to 350 degrees F.
Add oatmeal or bread crumbs, mozzarella, Parmesan cheese, diced onion, and salt to a large mixing bowl and mix to combine.
Stir in the ketchup and egg to the cheese mixture.
Add the ground chicken and mix just until combined. Don’t overmix or the chicken will get tough.
Shape the ground chicken mixture into two equal-sized mini loaves and place them on a parchment paper-lined baking sheet.
Top each meatloaf mixture with 4 half slices of thick bacon, tucking the ends underneath.
Bake uncovered for about 45 minutes or until the internal temperature reaches 165 degrees F on a meat thermometer.
Switch the oven to broil and cook another 5 minutes.
Garnish with fresh parsley if desired, serve, and enjoy!

Store leftover meatloaf in an airtight container in the fridge for 3 – 4 days. To store meatloaf leftovers in the freezer, wrap each portion in aluminum foil or plastic wrap then place it inside a plastic zipper bag.
