Ground Chicken Meatloaf is easy to make and has bacon on top of the meatloaf! A great alternative to traditional meatloaf, this will become a new family favorite comfort food.
Add oatmeal, mozzarella, Parmesan cheese, diced onion, and salt to a large mixing bowl and mix to combine.
Stir in the ketchup and egg to the cheese mixture.
Add the ground chicken and mix just until combined. Don't overmix or the chicken will get tough.
Shape the ground chicken mixture into two equal-sized mini loaves and place them on a parchment paper-lined baking sheet.
Top each with 4 half slices of thick bacon, tucking the ends underneath.
Bake uncovered for about 40 minutes or until the internal temperature reaches 165 degrees F on a meat thermometer.
Switch the oven to broil and cook for another 5 minutes.
Garnish with fresh parsley if desired, serve, and enjoy!
Notes
Store leftover meatloaf in an airtight container in the fridge for 3 - 4 days. To store meatloaf leftovers in the freezer, wrap each portion in aluminum foil or plastic wrap then place it inside a plastic zipper bag.
