Roasted Chicken and Brussels Sprouts

Roasted Chicken and Brussels Sprouts is one of our favorite chicken recipes. A garlic thyme sauce coats tender Brussels sprouts topped by crispy bacon-wrapped boneless chicken. Garnish with fresh parsley if desired. Ready in about 35 minutes!

Substitutions

Sub boneless skinless chicken thighs for the skinless chicken breasts.

You can also use Italian seasoning instead of dried thyme.

How to make Roasted Chicken and Brussels Sprouts

Step 1 – Preheat the oven to 400 degrees F.

Step 2 – Place Brussels sprouts in a single layer at the bottom of an 8×8-inch baking dish.

Step 3 – Drizzle the vegetables with olive oil and season with salt and pepper.

Step 4 – In a small bowl, whisk together the minced garlic, lemon juice, chicken broth, and thyme. Pour over the Brussel sprouts in the dish.

Step 5 – Sprinkle each chicken breast with salt and pepper then wrap with bacon. Place the chicken bacon seam-side down on top of the sprouts.

Step 6 – Bake in the preheated oven on the middle oven rack for 25-30 minutes or until an instant-read thermometer reaches 165 degrees F. If you want the bacon to be extra crispy, switch the oven to broil and allow it to cook under the broiler for a few extra minutes.

Ingredients

  • 8 ounces frozen brussels sprouts
  • 1 Tablespoon olive oil
  • salt and black pepper to taste
  • 2 teaspoons jarred minced garlic
  • 1 teaspoon fresh lemon juice
  • ¼ cup chicken broth
  • 1 teaspoon dried thyme
  • 2 boneless skinless chicken breasts
  • 2 slices of bacon

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Place the Brussels sprouts in an even layer in the bottom of an 8×8 inch baking dish.
  • Drizzle the vegetables with olive oil and season with salt and pepper.
  • Whisk together the minced garlic, lemon juice, chicken broth, and thyme. Pour over the Brussels sprouts into the dish.
