Ingredients

  • 4 slices brioche bread
  • 1 teaspoon pure vanilla extract (divided)
  • 2 large eggs
  • 1 cup milk
  • ½ teaspoon ground cinnamon
  • 1 Tablespoon light brown sugar
  • 3- ounce cream cheese (room temperature)
  • 1 Tablespoon confectioners’ sugar (powdered sugar)
  • 1 cup fresh raspberries

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Grease two 18.6 oz oven-safe baking dishes (or an 8×8 square) with butter or spray with nonstick spray.
  • On a cutting board, cut the bread into cubes, about 1 inch in size.
  • In a large bowl, whisk eggs, milk, cinnamon, brown sugar, and ½ teaspoon vanilla.
  • Fold the bread cubes into the milk mixture until well-saturated.
  • Using a handheld or stand mixer fitted with a whisk attachment beat the room temperature cream cheese on medium-high speed until completely smooth.
  • Beat in the powdered confectioners’ sugar and 1/2 teaspoon vanilla extract until combined.
  • Drop small spoonful's of cream cheese mixture on top of the bread mixture.
  • Then sprinkle on the raspberries. Stir gently to combine.
  • Pour the bread mixture into prepared dishes, divided evenly.
  • Bake uncovered for 30 – 35 minutes or until golden brown on top.Serve the hot dishes on cork trivets to protect tables and surfaces.
