- 4 slices brioche bread
- 1 teaspoon pure vanilla extract (divided)
- 2 large eggs
- 1 cup milk
- ½ teaspoon ground cinnamon
- 1 Tablespoon light brown sugar
- 3- ounce cream cheese (room temperature)
- 1 Tablespoon confectioners’ sugar (powdered sugar)
- 1 cup fresh raspberries
Instructions
- Preheat the oven to 350 degrees F.
- Grease two 18.6 oz oven-safe baking dishes (or an 8×8 square) with butter or spray with nonstick spray.
- On a cutting board, cut the bread into cubes, about 1 inch in size.
- In a large bowl, whisk eggs, milk, cinnamon, brown sugar, and ½ teaspoon vanilla.
- Fold the bread cubes into the milk mixture until well-saturated.
- Using a handheld or stand mixer fitted with a whisk attachment beat the room temperature cream cheese on medium-high speed until completely smooth.
- Beat in the powdered confectioners’ sugar and 1/2 teaspoon vanilla extract until combined.
- Drop small spoonful's of cream cheese mixture on top of the bread mixture.
- Then sprinkle on the raspberries. Stir gently to combine.
- Pour the bread mixture into prepared dishes, divided evenly.
- Bake uncovered for 30 – 35 minutes or until golden brown on top.Serve the hot dishes on cork trivets to protect tables and surfaces.
