Instructions
Preheat oven to 350 degrees F.
Grease two 18.6 oz oven-safe baking dishes with butter or spray with nonstick spray.
On a cutting board, cut the bread into cubes, about 1 inch in size.
In a large bowl, whisk eggs, milk, cinnamon, brown sugar, and ½ tsp vanilla together.
Fold the bread cubes into the milk mixture until well-saturated.
Using a handheld or stand mixer fitted with a whisk attachment beat room temperature cream cheese on medium-high speed until completely smooth.
Beat in powdered confectioners’ sugar and 1/2 teaspoon vanilla extract until combined.
Drop small spoonfuls of cream cheese mixture on top of the bread mixture.
Then sprinkle on raspberries. Stir gently to combine.
Pour the bread mixture into prepared dishes, divided evenly.
Bake uncovered for 30 - 35 minutes or until golden brown on top.
Serve hot dishes on cork trivets to protect tables and surfaces.
