How to make Strawberry Cookie Tarts
Step 1 – In a cozy little mixing bowl, grab your cream cheese, sugar, and vanilla, and give them a good whip with your electric mixer on medium speed. Keep mixing until everything is nice and fluffy—it’s going to be delicious!
Step 2 – Take some of that delicious cream cheese mixture and spread it generously on top of the cookies!
Step 3 – Top each cookie with a strawberry half, cut side down. It adds a delightful touch!
Step 4 – Just pop them onto the baking sheet lined with wax paper!
Step 5 – In a little microwave-safe bowl, let’s mix together the chocolate morsels and some shortening. It’ll be delicious!
Step 6 – Pop it in the microwave on high for about a minute, but don’t forget to give it a stir every 30 seconds until it’s all melted and smooth! Enjoy!
Step 7 – Spread a lovely drizzle over your delicious strawberry-topped cookies! Then, pop them in the fridge to chill for anywhere between 30 minutes and 24 hours. Enjoy!

Strawberry Cream Cheese Cookies

Ingredients
- 4 ounces cream cheese, softened
- ¼ cup powdered sugar
- ¼ teaspoon vanilla
- 12 soft and chewy chocolate chip cookies, any brand
- 6 medium strawberries, halved
- ⅓ cup semi-sweet chocolate chips
- ½ teaspoon shortening
Instructions
- In a small mixing bowl beat cream cheese, sugar, and vanilla until fluffy.
- Spread cream cheese mixture on tops of cookies.
- Place one strawberry half, cut side down, on each cookie and move to a wax paper-lined baking sheet.
- In a small microwave-safe bowl combine chocolate morsels and shortening. Microwave on high about 1 minute or until melted, stirring every 30 seconds.
- Drizzle over strawberry-topped cookies.
- Chill in the refrigerator for 30 minutes to 24 hours.
