These Easy Marinated Grilled Steak Kabobs have succulent tender Ribeye steak paired with baby bella mushrooms, baby potatoes, onions, and green pepper marinated and grilled on skewers.
This small batch recipe for two makes a great lunch, dinner, or impressive romantic date night meal.

How to grill Shish Kebobs
Cut the steak into 12 equal pieces.
Remove the stems from the mushrooms.
Dice the green pepper into twelve squares, about 1 inch each.
Chop the onion into twelve pieces, about 1 inch each.
Add the steak cubes, mushrooms, green peppers, and onions to a zipper bag.
In a medium-sized bowl whisk together the soy sauce, ketchup, cooking oil, white vinegar, brown sugar, garlic powder, and onion powder.
Pour the marinade over the ingredients in the bag. Marinate in the fridge for at least 1/2 hour and up to 2 hours.
At the same time, place four wooden skewers in water to soak.
Also, add the potatoes to a medium saucepan and add enough water to cover by 1 inch. Bring the water to a boil and cook potatoes until just barely fork-tender, about 5 – 7 minutes. Drain and set aside.
Add equal amounts of steak cubes, mushrooms, potatoes, green peppers, and onions (alternating pieces) to each skewer. (2 mushrooms each and 3 each of everything else)
Heat a grill to medium-high and lightly oil the grate. Add the kabobs and grill for about 2 minutes on each of the four sides.

For the Steak Kabobs:
- ¾ lb Ribeye steak
- 8 baby bella mushrooms (about 1 inch in size)
- 12 baby potatoes (about 1 inch in size)
- ½ green bell pepper
- ½ small onion (white, yellow, or red)
For the Marinade:
- ¼ cup soy sauce
- ¼ cup ketchup
- ¼ cup vegetable oil
- 2 Tbsp white vinegar
- 2 Tbsp brown sugar
- ½ tsp garlic powder
- ½ tsp onion powder
Instructions
