Pepper Jack Chicken Casserole

Pepper Jack Chicken Casserole is easy, delicious, low carb, and ready in just 35 minutes. Diced chicken, mushrooms, and green beans are coated in a creamy Pepper Jack cheese sauce. This recipe has been updated.

  • onion powder
  • garlic powder
  • cumin
  • Salt and pepper
  • canned green beans
  • sour cream 
  • egg
  • shredded Pepper Jack Cheese

How to make Pepper Jack Chicken Casserole

Step 1 – Preheat the oven to 350 degrees F.

Step 2 – Spray an 8×8 inch casserole dish with non-stick spray.

Step 3 – On a cutting board, dice the chicken into bite sized cubes.

Step 4 – In a medium bowl, mix the chicken, mushrooms, onion powder, garlic powder, cumin, salt, pepper, drained green beans, beaten egg, chopped Pepper Jack cheese, and sour cream until combined.

Step 5 – Place the chicken mixture in the bottom of the prepared baking dish.

Step 6 – Bake 30 minutes or until chicken is cooked through.

  • 8 ounces boneless skinless chicken
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 can green beans (drained)
  • 1/4 cup sour cream
  • 1 egg (beaten)
  • 4 ounces shredded Pepper Jack Cheese

Instructions

  1. Preheat the oven to 350 degrees F.

Not bad. A bit dry, IMO. I followed the recipe exactly, except I cut the rice down to 1/3 cup. If I make again, I'll cover the casseroles with foil.
