These individual Pepper Jack Chicken Casseroles are easy and delicious, ready in just 40 minutes. Diced chicken, mushrooms, rice, and green beans are coated in a creamy sauce and topped with a mildly spicy slice of melted Pepper Jack cheese.

How to make Pepper Jack Chicken Casserole:

Preheat the oven to 350 degrees F (180 C).

Pour the uncooked rice into the two dishes, divided evenly.

Dice the chicken into bite sized pieces.

Cut the mushrooms into slices.

In a medium bowl, mix the chicken, mushrooms, onion powder, garlic powder, cumin, salt, pepper, green beans, and sour cream until combined.

Place the chicken mixture in the bottom of the two baking dishes.

Cut the butter into small pieces and scatter on top of the chicken mixture.

Bake 30 minutes or until chicken is cooked through.

 

Top with the Pepper Jack cheese slices and continue baking until the cheese is melted, about 3 – 5 minutes.

  • 1/2 cup instant rice (uncooked)
  • 4 oz mushrooms
  • 2 boneless skinless chicken pieces
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup frozen whole green beans
  • 1/4 cup sour cream
  • 2 Tablespoons butter
  • 2 Slices Pepper Jack Cheese
