Pepper Jack Chicken Casserole

These individual Pepper Jack Chicken Casseroles are easy and delicious, ready in just 45 minutes. Diced chicken, mushrooms, rice, and green beans are coated in a creamy sauce and topped with a mildly spicy slice of melted Pepper Jack cheese.

We serve them in individual oven safe baking dishes which go right from the oven to the table for an easy and fun serving option. Be careful because they are hot to touch but they also keep the food warm during the meal. Place them on trivets or pot holders to protect tables or counter tops.

How to make Pepper Jack Chicken Casseroles:

Preheat the oven to 350 degrees F (180 C).

Cook the rice according to the package directions.

Pour the rice into the two dishes, divided evenly.

Dice the chicken into bite sized pieces.

Cut the mushrooms into slices.

In a medium bowl, mix the chicken, mushrooms, onion powder, garlic powder, cumin, salt, pepper, green beans, and sour cream until combined.

Place the chicken mixture in the bottom of the two baking dishes.

Cut the butter into small pieces and scatter on top of the chicken mixture.

Bake 30 minutes or until chicken is cooked through.

Top with the Pepper Jack cheese slices and continue baking until the cheese is melted, about 3 – 5 minutes.

  • Salt and pepper to taste
  • 1 cup frozen whole green beans
  • 1/4 cup sour cream
  • 2 Tablespoons butter
