This Jalapeño Popper Chicken Hash Brown Casserole combines juicy tender chicken topped with layers of cream cheese and chives, jalapeño strips, gooey melted sharp cheddar and bacon crumbles over a bed of tender crisp hash browns.

How to make Jalapeño Popper Chicken Hash Brown Casserole:

Preheat the oven to 375 degrees F (190 C).

 

Layer the hash brown potatoes in the bottom of an 8 x 8 inch baking dish. Click here for an oven safe 8 x 8 inch glass baking dish.

Butterfly the chicken breast in half using a filet knife. Click here for a Rada Filet Knife with Leather Scabbard.

Place the chicken breasts on top of the hash browns and season with salt and pepper.

In a bowl, mix together the garlic powder, onion powder, dried chives, and cream cheese until well combined.

Spread the cream cheese mixture over the chicken pieces, divided evenly.

Wash the jalapeño pepper and then cut the top off. Remove the seeds and ribs for a milder effect. (Leave some seeds and ribs if you like it spicier.)

 

Slice the pepper into strips.

Lay the strips on top of the cream cheese mixture, divided evenly.

Sprinkle the sharp cheddar cheese over top of the pepper strips, divided evenly.

Bake for 35 – 40 minutes until chicken is cooked through.

 

While the casserole cooks, fry the bacon until crisp. Drain on paper towel and then break into crumbles.

 

Remove the casserole from the oven and sprinkle with bacon crumbles.

  • salt and pepper to taste

  • 2 oz cream cheese (softened)
  • 1 jalapeño pepper
  • 1/4 cup shredded sharp cheddar cheese
  • 2 slices bacon
