Chicken and Broccoli Casserole with Mayo

This Chicken and Broccoli Casserole with Mayo is delicious, packed with tender chicken, cheese, and broccoli florets. The creamy sauce flavor is very close to homemade Alfredo.

This recipe is moderately low-carb, but not necessarily by Keto extreme low-carb guidelines.

Why I love this recipe

We love making this easy dish in individual portions for easy serving and easy clean up, but you can also use a single 2-quart casserole dish. It makes a great Sunday dinner or busy weeknight meal.

Need a side dish to go with it? We like brown rice, a side salad, and these easy homemade dinner rolls.

Thank you for this wonderful recipe. I need a low sodium meal and this is so delicious. The seond time I made the recipe it was dryer than the first. I wonder if adding a little water is OK?

Zona

Hi Marilyn, yes water, milk, or extra sour cream should work if you want to add just a little more moistness. Thanks for your question :)

Can I use plain Greek yogurt in place of sour cream?

Zona

Hi Michael, yes that should work fine. Thanks for your question :)

Will it still turn out the same with fresh broccoli,as far as water content or do you need to add water?

Zona

Hi Tee, you can substitute fresh broccoli for the frozen broccoli. Fresh broccoli will yield a bit longer cooking time than frozen. Also, the size you cut your broccoli will affect its cooking time as well. If you like your broccoli more on the softer side, cook it longer. Thanks for your question :)

This might be a stupid question as well but is the chicken cooked or raw? I can't tell from the pictures.

Zona

Hi Kristina, the chicken is raw and cut into bite-sized pieces. It will cook completely during the baking cycle. Enjoy :)

Is the cook time 30 min or 40 min?

Zona

Wednesday 30th of September 2020

Hi Kristina, the baking time is 40 minutes and then 5 more minutes after the cheese is added. I corrected the post and recipe card. Thank you for letting me know :)
