Ingredients
boneless skinless chicken breasts
spaghetti pasta
Rotel tomatoes and chiles
cream cheese
sour cream
ground cumin
garlic powder
onion powder
salt
shredded sharp cheddar cheese
Substitutions
To save time, use rotisserie chicken, or leftover chicken, instead of raw chicken. Skip step 2 and add the cooked chicken during step 7.
You can use any kind of pasta instead of spaghetti noodles.
Sprinkle in some black pepper or diced green bell peppers if you wish.

How to make chicken spaghetti casserole
Step 1 – On a cutting board, dice the chicken into bite-sized pieces.
Step 2 – Spray a skillet with non-stick spray and fry the chicken cubes over medium-high heat, stirring often, until cooked through about 10 minutes
Step 3 – At the same time, in a saucepan, cook spaghetti according to the package directions for al dente. When done, drain and set aside.
Step 4 – Heat the oven to 350 degrees.
Step 5 – Lightly coat an 8×8 inch baking dish with non-stick cooking spray and set aside.
Step 6 – To a saucepan, over medium-low heat, add the cream cheese, sour cream, Rotel tomatoes and chilies, cumin, salt, garlic, and onion powder. Stir together until cream cheese is melted.
Step 7 – Stir in the cooked chicken and 1/4 cup of cheddar cheese.
Step 8 – Add the cooked spaghetti and stir together until the noodles are coated.
Step 9 – Pour the creamy sauce and chicken mixture into the prepared baking dish. Sprinkle the top of the casserole with the remaining 1/4 cup of cheddar cheese.
Step 10 – Bake in the preheated oven for 20 – 25 minutes until heated through and the top of the casserole is golden brown and the cheese is melted.
Step 11 – Remove from oven and serve.
Pro Tips
If you have a large family this chicken spaghetti bake is easily doubled.
Store leftovers in an airtight container in the fridge for 3-4 days. They can also be frozen.

- 4 ounces canned Rotel tomatoes and chiles (1/4 cup)
- 2 ounces cream cheese
- ⅛ cup sour cream
