This easy beer cheese dip recipe was handed down to me by my Mother-In-Law. We’ve been craving this cheesy snack again lately so it was time to downsize it to make this small batch version, which makes it more manageable for just the two of us.

How to make Blue Cheese Beer Dip
Step 1 – On a cutting board, dice the onion and green onion into small pieces. Set the green onion aside for garnish.
Step 2 – In the bowl of a stand mixer (or medium bowl and hand mixer) combine the onion, cream cheese, and blue cheese.
Step 3 – Add in small amounts of beer at a time until you reach the texture of the dip that you like.
Step 4 – Sprinkle the green onions on top of the dip for garnish if desired.
Step 5 – Cover and chill in the fridge for an hour or two or transfer to a serving dish and serve immediately.

This dish is great as an appetizer or as a side dish option for lunch or dinner. Leftovers can be stored in an airtight container in the fridge for 1 to 2 weeks.
