Banana Flapjacks

These Banana Flapjacks are homemade pancakes that are easy to make and are loaded with fresh banana flavor. Top with butter, maple syrup, jam, or your favorite toppings, if desired.

This is a small batch recipe that makes just 4 medium sized thick and fluffy flapjacks perfect to feed 2 people for breakfast, brunch, lunch, or dinner.

Difference between flapjacks and pancakes?

In the US they are the same thing and can be called by either name. In the UK, flapjacks and pancakes refer to two different things. Flapjacks are sweet tray-baked bars made from oats, like oat bars, muesli bars, cereal bars, or granola bars. Pancakes are flat cakes made of thin batter and cooked on one side, then flipped over and cooked on the second side.

How to make Banana Flapjacks

Combine the milk with the vinegar in a small bowl and whisk together. This makes homemade buttermilk. Set it aside for 5 minutes to sour.

In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix together.

Next, whisk together the egg and butter into the homemade buttermilk.

Pour the wet ingredients into the flour mixture and whisk together until combined and no lumps remain. The batter will be thick.

Dice the banana and stir into the batter just until combined.

Heat a large electric skillet to 350 degrees F and coat with cooking oil.

Pour 4 equal circles of batter onto the skillet and cook until bubbles appear on the surface and the bottom is golden brown.

Flip them over gently with a spatula and cook until the second side is golden brown. Each side should only take a few minutes.

Ingredients

  • 1/4 cup milk
  • 1 Tablespoon white vinegar
  • 1/2 cup bread flour (or all-purpose)
  • 1 Tablespoon white sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 Tablespoon melted butter
  • 1 small ripe banana
