This is a small batch recipe that makes just 4 medium sized pancakes perfect to feed 2 people for breakfast, brunch, lunch, or dinner.

How to make homemade Fluffy Pancakes:

Combine the milk with the vinegar in a small bowl and whisk together. This makes homemade buttermilk. Set it aside for 5 minutes to sour.
In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix together.

Next, whisk together the egg and butter into the homemade buttermilk. Click for a whisk.

Pour the wet ingredients into the flour mixture and whisk together until combined and no lumps remain.

If adding optional fruit, stir it in now just until combined.
Heat a large skillet over medium heat and coat with cooking spray or cooking oil. I prefer oil for a crispier finish.
