How to make Fluffy Pancakes for two:

Combine the milk with the vinegar in a small bowl and whisk together. This makes homemade buttermilk. Set it aside for 5 minutes to sour.

In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix together.

 

Next, whisk together the egg and butter into the homemade buttermilk. Click here for a whisk.

Pour the wet ingredients into the flour mixture and whisk together until combined and no lumps remain. If adding optional fruit, stir it in now just until combined.

Heat a large skillet over medium heat and coat with cooking spray or cooking oil. I prefer oil for a crispier finish.

 

Pour 1/4 cupfuls of batter onto the skillet and cook until bubbles appear on the surface and the bottom is golden brown.

Flip them over gently with a spatula and cook until the second side is golden brown. Each side should only take a couple of minutes.

  • 1/3 cup milk
  • 1 tablespoon white vinegar
  • 1/2 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 tablespoon butter or margarine, melted
  • 1/2 cup fruit (strawberries, blueberries, mashed ripe banana), optional
