Easy Homemade Fluffy Pancakes Recipe for Two

This is a small batch recipe that makes just 4 medium sized pancakes perfect to feed 2 people for breakfast, brunch, lunch, or dinner.

Add in your favorite fruit and top with butter, syrup, or jam if desired. 

How to make homemade Fluffy Pancakes:

Combine the milk with the vinegar in a small bowl and whisk together. This makes homemade buttermilk. Set it aside for 5 minutes to sour.

In a medium bowl, combine the flour, sugar, baking powder, baking soda, and salt. Mix together.

Next, whisk together the egg and butter into the homemade buttermilk. Click for a whisk.

Pour the wet ingredients into the flour mixture and whisk together until combined and no lumps remain.

If adding optional fruit, stir it in now just until combined.

Heat a large skillet over medium heat and coat with cooking spray or cooking oil. I prefer oil for a crispier finish.

Pour 4 equal circles of batter onto the skillet and cook until bubbles appear on the surface and the bottom is golden brown.

Flip them over gently with a spatula and cook until the second side is golden brown. Each side should only take a few minutes.

Serve with your favorite pancake toppings and enjoy!

  • 1 Tbsp white vinegar
  • 1/2 cup all-purpose flour
  • 1 Tbsp white sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1 Tbsp butter (melted)
  • 1/2 cup fruit - optional (strawberries, blueberries, mashed ripe banana)

I've never made pancakes before How I got to my 30s without ever doing this is a mystery lol, probably a mystery solved by the fact that I generally prefer waffles.

These were super easy to make, turned out thick and fluffy (almost crumpet like) and I'll for sure be making them again.

A special thanks for making it a small batch recipe. This made 4 pancakes as stated and was perfect with a side of scrambled eggs. I always waste so many ingredients cooking for just me and my husband (who has something against leftovers :P ), but this time there was no waste!
