Ingredients

(amounts are listed in the recipe card at the bottom of the post)

rice

soy sauce

brown sugar

jarred minced garlic

ground ginger

rice vinegar

beef sirloin

snow peas

sesame oil

mushrooms

Substitutions

You can use beef sirloin, flank steak, skirt steak, or any other tender beef.

Kinds of rice that work well in stir fry recipes are brown rice, jasmine rice, white rice, or steamed rice.

You can use regular soy sauce or low-sodium soy sauce.

How to make this easy beef stir fry

Step 1 – On a cutting board, slice the beef into thin slices.

Step 2 – Cook the rice according to the package directions.

Step 3 – Combine the soy sauce, brown sugar, garlic, ginger, and rice vinegar in a small bowl. Whisk well to combine and set the stir fry sauce aside.

Step 4 – Bring 2 cups of water to a boil in a medium saucepan. Add the snow peas and boil for 5 minutes. Drain and set aside.

Step 5 – Heat a large skillet until hot on medium high heat.

Step 6 – Add 1 tablespoon of sesame oil to the skillet. Immediately add the sliced mushrooms in a single layer and cook for about 5 minutes turning occasionally, until nicely browned.

Step 7 – Sprinkle in salt to taste (not too much) midway through. Remove the mushrooms to a separate bowl and set aside.

Step 8 – To the same skillet, on medium-high heat, add 1 tablespoon oil. Immediately add the thinly sliced beef. Cook the meat until it browns nicely, stirring often for about 2-3 minutes. Do not overcook the meat.

Step 9 – Return the snow peas and cooked mushrooms to the skillet with the beef.

Step 10 – Add the stir fry sauce to the skillet. Stir everything to combine, stir frying for about 1 minute.

Step 11 – Serve the meat mixture over the rice.

Make sure to slice the beef very thin and do not overcook it.

What’s the difference between snow and snap peas?

Snow peas are great for stir-frying. Snow peas are slightly tender, but crisp. Sugar snap peas are also tender yet crisp but also have a sweeter flavor.

Ingredients

  • 1 cup uncooked rice

Sauce ingredients:

  • 1/4 cup low-sodium soy sauce
  • 2 1/2 Tablespoons brown sugar
  • 1 teaspoon jarred minced garlic
  • 1/4 teaspoon ground ginger
  • 1 teaspoon rice vinegar

For the Beef:

  • 1/2 pound lean beef
  • 1 cup fresh crisp snow peas
  • 2 Tablespoons sesame oil
  • 1 cup sliced mushrooms

Instructions

  1. On a cutting board, slice the beef into thin slices.
  2. Cook the rice according to the package directions.

  7. Sprinkle in salt to taste (not too much) midway through. Remove the mushrooms to a separate bowl and set aside.
  8. To the same skillet, on medium-high heat, add 1 tablespoon oil. Immediately add the thinly sliced beef. Cook the meat until it browns nicely, stirring often for about 2-3 minutes. Do not overcook the meat.
  9. Return the snow peas and cooked mushrooms to the skillet with the beef.
  10. Add the stir fry sauce to the skillet. Stir everything to combine, stir frying for about 1 minute.
  11. Serve the meat mixture over the rice.

I made the beef stir fry and it was excellent. I changed up a few things by dredging the meat in cornstarch first, and adding a fat tablespoon of chili garlic sauce to the soy mixture. I'm making it again tonight and adding baby bok choy . Thanks for the inspiration.
