This is a copycat recipe for Arby’s Beef and Cheddar. Thin sliced roast beef, cheddar cheese sauce, and red ranch dressing are piled high on an onion sandwich bun.
I would eat at Arby’s every day if I could but I don’t live very close to one so I decided to try to duplicate the Beef and Cheddar sandwich.
That may sound easy because it’s just a roast beef sandwich with some cheese and red ranch sauce on an onion bun.
What makes it difficult is getting that red ranch sauce right. While it’s not a homemade red ranch sauce, I think the dressing I found is super close to having the perfect flavor. Give it a try yourself!

How to make the best Beef ‘n Cheddar at home
Preheat the oven to 400 F.
Lay a sheet of aluminum foil flat on the counter.
Place the thinly sliced roast beef in the center of the foil and fold up all four sides to completely enclose the beef.
Bake in the preheated oven for 10 to 15 minutes.
When the beef is almost done, heat the cheddar cheese sauce in a microwave-safe bowl for 30 seconds or until heated through.
Place the bottom half of the onion bun on a plate and top with the Country French with Orange Blossom Honey Dressing.

Layer the roast beef slices, piled high, on top of the red dressing.
Spread the heated cheese sauce on top of the roast beef.
Reader Clare suggests “For an easy homemade cheese sauce, add 1 cup cream or whole milk to a pan and let it reduce. Add 2 slices of processed American cheese and 1 teaspoon of tapioca flour. It has the same consistency.”
Top the sandwich with the remaining half of the onion bun.

Ingredients

- 1 onion sandwich bun
- 2 Tablespoons Country French with Orange Blossom Honey Dressing
- 7 oz thinly sliced roast beef lunch meat

A small trick that I learned when working my very first job (in a roast beef restaurant) was to gently heat the roast beef in au jus or beef broth (using a strainer to let it drip)
I have found that this not only heats and 'browns' the beef, it adds a level of moisture and flavor too!

Kroger’s now carries bottles of Arby’s sauce. I followed your recipe and used the bottle of Arby’s sauce I bought at krogers. Tasted great!

Im making for a golf outing 12 sandwiches. do you lay the beef slices on top of each othe in the foil or single layer?

Hi Jo, I lay it on top of each other like the way it is piled on the sandwich. Since you are making 12 sandwiches you will want to do the beef for each sandwich in separate foil packets so they heat properly.

This recipe is an absolute lifesaver! I had to switch to a gluten free, dairy free diet with my new girlfriend and man, I miss fast food. I was able to swap in some Udi’s buns and Daiya cheese sauce (Kens Country is already gluten Free) and the results were awesome. Thanks for the recipe!
