You can also try gluten-free flour and oat milk to make gluten-free pancakes. Reader Amy C. says “Wow! These might be some of the best pancakes I’ve had. I used gluten-free flour, and oat milk in place of the regular milk, and they still turned out ultra fluffy and absolutely make a perfect breakfast. This will become my standard small-batch pancake recipe from now on!”
Add in fruit or chocolate chips, and your favorite toppings like butter, peanut butter, maple syrup, or jam if desired.
You can use two egg whites instead of one large egg.

How to make Fluffy Pancakes for Two
Step 1 – Combine the milk with the vinegar in a medium bowl and whisk together. This makes homemade buttermilk. Set it aside for 5 minutes to sour.
Step 2 – In a large bowl, combine flour, sugar, baking powder, baking soda, and salt. Mix together.
Step 3 – Next, whisk together the egg and melted butter into the homemade buttermilk.
Step 4 – Pour the wet ingredients into the dry ingredients and whisk them together until they are combined and no small lumps remain. If adding optional fruit or chocolate chips, stir it in now just until combined.
Step 5 – Heat an electric griddle to 350 degrees F. (or a large skillet over medium-high heat) and coat it with cooking spray or vegetable oil. I prefer oil for a crispier finish.
Step 6 – Pour 4 equal circles of pancake batter onto the non-stick pan in a single layer and cook until bubbles appear on the surface and the bottom is golden brown.
Step 7 – Flip them over gently with a spatula and cook until the second side is golden brown. Each side should only take a few minutes.
Step 8 – Serve with your favorite pancake toppings like maple syrup and enjoy!

Hi! I just wanted to say that I am a fan of this recipe. They where a little thin for thick pancakes, but to fix this I added about a Tablespoon of flour. I also added some extra vanilla, but that is just my personal preference :) I also wanted to say that the advertising is also really true, and looked almost the same as the picture. Over all I really Loved this recipe and plan to make it in the future.
I also separated half of the batter and added a teaspoon and a half of coca powder to it. They tasted amazing!
Overall I had a anwsome experience with theese pancakes and recommend fully. thank you for the recipe!
