How to make Cozy Chicken and Dumplings:
Dice the chicken, celery, onion, and carrots. A filet knife is perfect for cutting through chicken. Click for a Rada Filet Knife with Leather Scabbard.
In a medium sized pot boil the chicken broth, chicken, celery, onion, and carrots for 15 minutes. Click for a sauce pan.
Stir in the cream of chicken soup, sage, salt and pepper, and then bring back to a boil.
In a medium size bowl mix together the Jiffy baking mix (see notes in recipe card below) and milk forming sticky batter.
Divide the batter into 4 equal portions and drop by spoonfuls onto the hot mixture.
Cook uncovered for 10 minutes over low heat.
Cover and cook 10 more minutes.

Easy Chicken and Dumplings Recipe for Two is super simple, made in one pot, full of flavor, and quite comforting. Boneless chicken is simmered in one pan with celery, carrots, and onion with savory seasonings and topped with fluffy biscuit type dumplings.
For the Chicken:
- 2 cups low sodium chicken broth
- 6 ounces boneless chicken
- 1 stalk celery
- 1/2 onion
- 1 cup carrots
- 1 can fat free cream of chicken soup (or regular cream of chicken soup)
- 1/2 teaspoon ground sage
- Salt and pepper to taste
For the Dumplings:
- 3/4 cup Jiffy baking mix
- 1/4 cup skim milk

You can make homemade baking mix to replace the Jiffy mix in this recipe. In a medium bowl, add 3/4 cup flour, 1/4 teaspoon salt, 1/2 tablespoon baking powder, 1/8 cup shortening. Cut in shortening with pastry blender until combined and no large pieces of shortening remain.

I made this and it was good. A few things I did different: used 3 cups chicken broth, made my own cream of chicken soup since we don't care for the canned stuff, used frozen peas and carrots and made potato dumplings since I had leftover mashed potatoes that needed to be used up. Really good! Will make again.

@Zona, I use the leftover rotisserie chicken after one meal. Add 6 cups or more of water and simmer for an hr or more, remove the chicken to cool. Add the carrots, sweet onions and celery..s & p plus thyme and a bay leaf. Simmer the veggies till the chicken has cooled enough to pick the meat. Add the chicken meat back to the pot and make the dumplings, bisquick. Drop into the pot Then 10 mins uncovered and 10 minutes covered. Two meals and a lunch for the cost of a $6 rotisserie chicken.
