How to make Mini Skillet Cookie
Step 1 – Preheat the oven to 350 degrees F.
Step 2 – Spray an 8-inch oven-safe skillet with non-stick cooking spray.
Step 3 – In a stand mixer bowl with the paddle attachment, cream the butter with the granulated sugar, and brown sugar.
Step 4 – Add in the vanilla and the egg yolk. Continue mixing on low speed until just combined. Don’t overmix.
Step 5 – Then add the dry ingredients except the chocolate chips. Mix until the dough forms.
Step 6 – Gently fold in the chocolate chips or other candy of choice.
Step 7 – Press the dough in an even layer into the small skillet.
Step 8 – Bake in the preheated oven for 25-30 minutes until the cookie is golden brown.
Step 9 – Let it cool for about 10-15 minutes then serve the warm cookie topped with ice cream.
Pro Tips
Store leftovers in an airtight container in the fridge for 4-5 days.

- KitchenAid 5 Quart Stand Mixer or mixng bowl
Ingredients
- 4 Tablespoons butter (room temperature)
- ¼ cup granulated sugar
- ¼ cup packed light brown sugar
- ½ teaspoon vanilla extract
- 1 large egg yolk ((do not use a whole egg))
- ½ cup all-purpose flour
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup semi-sweet chocolate chips (or chocolate chunks, M&M’s, or Reese’s Pieces)
- Optional – ice cream for topping
Instructions
- Preheat the oven to 350 degrees F.
- Spray an 8-inch oven-safe skillet with non-stick cooking spray.
