Mini Skillet Cookie Recipe

This Mini Skillet Cookie bakes up pillowy soft and chewy. Add a scoop of vanilla ice cream on top for an amazing dessert for two. This recipe makes just one 8-inch Pizookie, serves 2 – 4, and is super simple to prepare.

Ingredients

vanilla extract

large egg yolk
((do not use a whole egg))

all-purpose flour

semi-sweet chocolate chips
(or chocolate chunks, M&M’s, or Reese’s Pieces)

Instructions
Preheat the oven to 350 degrees F.
Spray an 8-inch oven-safe skillet with non-stick cooking spray.
In the bowl of a stand mixer, cream the butter with the white sugar, and brown sugar.
Add the vanilla and the egg yolk. Continue mixing on low speed until just combined. Don’t overmix.
Then add the flour, baking soda, and salt. Mix until the dough forms.
Gently fold in the chocolate chips, or other candy of choice.
Press the chocolate chip cookie dough into the small skillet.
Bake for 25-30 minutes until the cookie is golden brown.
Let it cool for about 10-15 minutes then serve warm topped with ice cream.
Notes
You can substitute the chocolate chips with chocolate chunks, M&M’s, Reese’s pieces, or your favorite cookie ingredient.
You can add extra chocolate chips on top before baking.
Try adding any type of chopped nuts.
Store leftovers in an airtight container in the fridge for 4-5 days.
