How to make Elote Corn Casserole:
Preheat the oven to 350 degrees F.
In a large bowl, mix together the corn, mayo, sour cream, chili powder, garlic powder, salt, cayenne, and 1/8 cup of the Queso Fresco cheese.

Spray an 18.6 oz oven safe baking dish with non-stick spray. Click for an 18.6 oz oven safe baking dish.
Pour the corn mixture into the prepared dish.

Bake 25 minutes or until heated through and the edges begin to bubble.
Sprinkle another 1/8 cup Queso Fresco over the casserole and top with the chopped cilantro if desired.

My medical bill was larger than expected and so I cut back on my food purchases so I had a little bit of several things and this worked out beautifully along with a Southwestern rice and bean casserole. YaY!!!!!

I don’t know how I managed before I found your site. I raised a big family, and after they grew up and went on with their lives, I was at a loss trying to make a meal for just me. I ate a lot of frozen dinners, and take out but I was hungry for real food! Then I found you, and have been cooking up a storm! I’ve made several of the recipes, and haven’t found one I didn’t like. What is "Queso Blanco" cheese? Any white cheese? Like Monterrey Jack, mozzarella, or queso fresco?

Hi Kris, Queso Blanco is a moist, crumbly cheese that becomes creamy when it is heated. It can usually be found in the gourmet cheese section at grocery stores. You can also substitute it with Monterey Jack if you can't find it. Thanks
