Fruity Brownie Pizza - delicious dessert!

This recipe makes a small batch of Fruity Brownie Pizza. Taste the richness of the homemade brownie and cream cheese spread paired with the freshness of the fruit and the sweetness of the chocolate drizzle. This is the perfect twist on traditional fruit pizza. This is a small batch recipe that makes 4 servings but we just have it for dessert two nights in a row!

Preheat your oven to 375 degrees F.

 

In the bowl of a stand mixer or other medium bowl, combine the cocoa, baking soda, 2 tablespoons melted butter, and 1/8 cup very hot/boiling water. Stir until mixed together.

 

With the mixer on the lowest speed add in order listed (if mixing by hand, stir after each addition): 2/3 cup sugar, egg, 2 tablespoons melted butter, vanilla, flour, and salt. Mix until combined.

Bake at 375° for 15-20 minutes or until a toothpick inserted near the center comes out clean. Cool completely.

 

In a large bowl, beat cream cheese and sugar until smooth. Spread over brownie crust.

Drain pineapple reserving the juice into a bowl. Place the banana slices into the pineapple juice to prevent browning.

 

Arrange the kiwi, banana, strawberries and pineapple over cream cheese layer.

In a microwave, melt the chocolate and butter; stir until smooth. Drizzle over the fruit.

 

Chill in the refrigerator for 1 hour.

Ingredients (Choose US or Metric)
For the Brownies:
  • 1/4 cup cocoa
  • 1/8 teaspoon baking soda

  • 1 small kiwi peeled and diced
  • 1/2 Banana sliced (place into pineapple juice)
  • 1/2 cup sliced fresh strawberries
  • 1/8 cup semisweet chocolate chips
  • 1 tablespoon butter
