Fruit Pizza Brownie Recipe

Ingredients

For the Brownies

  • ¼ cup cocoa
  • teaspoon baking soda
  • 2 Tablespoon melted butter
  • cup boiling water

– add to the batter in the order listed

  • cup sugar
  • 1 egg (slightly beaten)
  • 2 Tablespoon butter (melted)
  • ½ teaspoon vanilla extract
  • ½ cup flour
  • teaspoon salt

For the topping

  • 4 ounces cream cheese (softened)
  • 3 Tablespoon sugar
  • 8 ounces pineapple tidbits with juice (reserve juice)
  • 1 small ripe kiwi
  • ½ Banana
  • ½ cup fresh strawberries (sliced)
  • cup semisweet chocolate chips
  • 1 Tablespoon butter

Instructions
 

  • Preheat oven to 375 F.
  • In the bowl of a stand mixer (or electric mixer and a medium bowl) combine cocoa, baking soda, 2 tablespoons melted butter, and 1/8 cup very hot/boiling water. Stir until combined.
  • With the mixer on the lowest speed add in the order listed (if mixing by hand, stir after each addition): 2/3 cup sugar, beaten egg, 2 tablespoons melted butter, vanilla, flour, and salt. Mix until combined.
  • Pour the brownie batter into a 9-inch buttered pie dish.
  • Bake for 15 – 20 minutes or until a toothpick inserted near the center comes out clean. Cool completely.
  • In a large bowl, beat cream cheese and sugar until smooth. Spread the cream cheese mixture over the brownie crust.
  • On a cutting board, peel and dice or slice kiwi.
  • Drain pineapple reserving juice into a bowl.
  • Slice the banana and place banana slices into the pineapple juice to prevent browning.
  • Arrange kiwi, banana, strawberries, and pineapple over the cream cheese layer.
  • In a small saucepan, melt chocolate and butter, stirring until smooth. Drizzle over the fruit.
  • Chill in the refrigerator for 1 hour.
