Fruit Pizza Brownie Recipe

For the Brownies
- ¼ cup cocoa
- ⅛ teaspoon baking soda
- 2 Tablespoon melted butter
- ⅛ cup boiling water
– add to the batter in the order listed
- ⅔ cup sugar
- 1 egg (slightly beaten)
- 2 Tablespoon butter (melted)
- ½ teaspoon vanilla extract
- ½ cup flour
- ⅛ teaspoon salt
For the topping
- 4 ounces cream cheese (softened)
- 3 Tablespoon sugar
- 8 ounces pineapple tidbits with juice (reserve juice)
- 1 small ripe kiwi
- ½ Banana
- ½ cup fresh strawberries (sliced)
- ⅛ cup semisweet chocolate chips
- 1 Tablespoon butter
Instructions
- Preheat oven to 375 F.
- In the bowl of a stand mixer (or electric mixer and a medium bowl) combine cocoa, baking soda, 2 tablespoons melted butter, and 1/8 cup very hot/boiling water. Stir until combined.
- With the mixer on the lowest speed add in the order listed (if mixing by hand, stir after each addition): 2/3 cup sugar, beaten egg, 2 tablespoons melted butter, vanilla, flour, and salt. Mix until combined.
- Pour the brownie batter into a 9-inch buttered pie dish.
- Bake for 15 – 20 minutes or until a toothpick inserted near the center comes out clean. Cool completely.
- In a large bowl, beat cream cheese and sugar until smooth. Spread the cream cheese mixture over the brownie crust.
- On a cutting board, peel and dice or slice kiwi.
- Drain pineapple reserving juice into a bowl.
- Slice the banana and place banana slices into the pineapple juice to prevent browning.
- Arrange kiwi, banana, strawberries, and pineapple over the cream cheese layer.
- In a small saucepan, melt chocolate and butter, stirring until smooth. Drizzle over the fruit.
- Chill in the refrigerator for 1 hour.
