Fruit Brownie Pizza

Ingredients

How to make Fruit Brownie Pizza

Step 1 – Preheat the oven to 375 degrees F.

Step 2 – In the bowl of a stand mixer or other medium bowl, combine the cocoa, baking soda, 2 tablespoons melted butter, and 1/8 cup very hot/boiling water. Stir until combined.

Step 3 – With the mixer on the lowest speed add in the order listed (if mixing by hand, stir after each addition): 2/3 cup sugar, egg, 2 tablespoons melted butter, vanilla, flour, and salt. Mix until combined.

Step 4 – Pour the brownie base into a 9-inch buttered pie dish.

Step 5 – Bake for 15 – 20 minutes or until a toothpick inserted near the center comes out clean. Cool completely.

Step 6 – In a large bowl, beat cream cheese and sugar until it is a good spreading consistency. Spread over the cooled brownie crust.

Step 7 – On a cutting board, peel and dice or slice the kiwi.

Step 8 – Drain the pineapple reserving the juice into a bowl.

Step 9 – Slice the banana and place the banana slices into the pineapple juice to prevent browning.

Step 10 – Arrange the kiwi, banana, strawberries, and pineapple over the cream cheese layer.

Step 11 – In a small saucepan, melt the chocolate and butter, stirring until smooth. Drizzle over the fruit.

Step 12 – Chill in the refrigerator for 1 hour.

Ingredients

For the Brownies

  • ¼ cup cocoa
  • teaspoon baking soda
  • 2 Tablespoon melted butter
  • cup boiling water

  • ½ cup sliced fresh strawberries
  • cup semisweet chocolate chips
  • 1 Tablespoon butter

Instructions

  • Arrange kiwi, banana, strawberries, and pineapple over the cream cheese layer.
  • In a small saucepan, melt chocolate and butter, stirring until smooth. Drizzle over the fruit.
  • Chill in refrigerator for 1 hour.
