How to make a small cheesy potato casserole
Preheat the oven to 425 degrees F.
Dice the onion.
Spray two 18.6 oz oven-safe baking dishes with non-stick spray and set aside.
In a large bowl, combine the thawed hash browns with 3 tablespoons of melted butter, pepper, salt, and chopped onion, blending well.
Add in the soup and sour cream, then the cheddar cheese, mixing everything well.

Spread the mixture evenly into the prepared baking dishes.

Mix 1 tablespoon melted butter and the potato chips or French’s Fried Onions together and sprinkle over top of casseroles.

Bake uncovered for 25 minutes.

Hi Sandy, A good rule of thumb is to set your timer for half the amount of time called for in the original recipe. In this case I would start checking for doneness around 15 minutes to be safe.
