Beef Roast with Vegetables

This easy Beef Roast with Vegetables has incredible flavor and includes creamy brown gravy! Tender potatoes, carrots, and onions are slow cooked in the crock pot with juicy fall-apart roast beef and smothered in delicious homemade brown gravy.

How to make Crockpot pot roast with gravy

For the Beef Roast with Vegetables

Dice the potatoes into large chunks and cut the onion into quarters.

Place the potatoes and carrots into a 4 quart Crockpot slow cooker. Click for a 4 quart Crockpot slow cooker.

Add the beef roast into the crock pot on top of the potatoes and carrots.

Top the roast with the onion quarters.

Sprinkle in the minced garlic, oregano, salt, and black pepper.

Gently pour the beef stock over everything.

Cover and cook on low for 8 hours or on high for 5 hours.

Remove the roast and veggies to a platter and cover with the Crockpot lid to keep warm.

For the Brown Gravy

Turn the slow cooker heat to high.

Add the butter to the liquid in the Crockpot and stir to melt.

In a small bowl whisk together the water and the cornstarch.

Pour the cornstarch slurry into the crockpot liquid and whisk until combined. Allow it to thicken for about 15 minutes, whisking occasionally.

Slice the beef or pull it apart with two forks to shred.

Season the gravy with salt and pepper to taste and drizzle over the roast, potatoes, and carrots.

Do you have to brown a roast before putting it in the crockpot?

You do not have to brown or sear a beef roast before cooking it in the crockpot but you can. If you want to, just add some oil to a frying pan and brown the roast for about 3 minutes on each side.

Which cut of beef is best for slow cooking?

Chuck:  including chuck roast, shoulder steak, boneless chuck roast, or chuck shoulder pot roast.

Brisket: Slice it against the grain of the meat for maximum tenderness.

Round:  including rump roast or bottom round.

Pot Roast Dinner Recipe and Gravy

Ingredients

For the Pot Roast:

  • 2 lb beef roast
  • 1.5 lbs potatoes
  • 1 lb bag baby carrots
  • 1 small onion
  • 1 1/2 cups beef stock
  • 1 teaspoon minced garlic
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

For the Gravy:

  • 2 Tablespoons butter (room temperature)
  • 1/4 cup water
  • 2 tablespoons cornstarch

Instructions

For the Pot Roast:

Can I make the gravy in a pot on the stove instead of using the crock pot?

Hi Autumn, yes you can. Just transfer the liquid from the crockpot to a saucepan and follow the rest of the gravy instructions until the gravy is the thickness you want. It may take less time on the stove too.

Have you cooked this recipe in a Dutch oven? Would I need to change anything if I did?

Hi Tingle, the best outcome for beef pot roast requires low and slow cooking so making this in a Dutch oven will take almost as long but you can do it like this: Preheat your oven to 325 F. Sprinkle the salt and pepper over the roast. Add some olive oil to a Dutch oven and start heating to medium-high heat. Brown the beef roast on all sides, approximately 1 to 2 minutes per side. Place the vegetables around the roast and the garlic on top. Pour the beef stock over the top of the roast. Sprinkle the oregano over the top. Cover and place in the oven. Bake in the oven for 4 - 5 hours or until the meat pulls apart easily using two forks. Remove the roast and veggies to a platter and cover with a lid to keep warm. Then make the gravy per my recipe instructions.

I reduced this (1/2 of my chuck roast, etc) to cook in my 2qt Crock Pot and it was delicious.. Just enough for a full meal and sandwiches the next day.. Really enjoyed this recipe..
