This easy classic Slow Cooker Chicken Cacciatore is made with chicken, onions, garlic, mushrooms, green peppers, tomato paste and spaghetti sauce and a delightful sprinkling of herbs all slow cooked in a crock pot until tender and served over thin spaghetti.
This classic Italian dish is a small batch recipe for two and makes a great weeknight dinner or romantic date night meal.
You can use either boneless breasts or thighs and the chicken can be frozen. If you like your veggies more crisp try adding them in at the last hour or two of cooking time.
You can also swap out the thin spaghetti with your favorite rice or other pasta.

How to make Crock Pot Chicken Cacciatore
Dice the onion.
Remove the seeds from the green pepper and dice it.
Place the chicken in a 4-quart crockpot slow cooker. Click for a 4 qt crockpot slow cooker.
Stir in the spaghetti sauce, tomato paste, mushrooms, onions, bell pepper, garlic, oregano, basil, and black pepper.
Cover and cook on Low until the chicken is tender, 6 to 8 hours.
Near the end of the chicken cooking time, prepare the thin spaghetti according to the directions on the package.
Serve the Chicken Cacciatore over the thin spaghetti.
