Creamy Chicken Asparagus

This Creamy Chicken Asparagus has chicken thighs seared to a crispy golden brown then slow simmered with asparagus in a creamy Parmesan cheese sauce in a cast iron skillet.

This dish is easy and delicious, cooked in just one pan and ready in 30 minutes.

How to make Chicken Thighs and Asparagus

Snap the ends off the asparagus and cut them into 3 inch strips. Set aside.

For the chicken thighs

In a medium cast iron skillet, heat the oil on medium heat. Click for a medium cast iron skillet.

Sprinkle the chicken thighs with 1/4 teaspoon black pepper, the garlic powder, and onion powder.

Place them into the hot skillet and cook for about 7 minutes. Flip them over and cook for 7 more minutes.

Remove the chicken from the skillet and set aside. Remove all but 1/2 teaspoon oil from the skillet and return to the burner.

For the creamy Parmesan sauce

Heat the butter in the microwave until just melted.

In a medium bowl, combine the heavy cream, flour, melted butter, minced garlic, dried chives, parsley, Parmesan cheese, 1/4 teaspoon black pepper, and salt. Mix until well combined.

In the same skillet used for the chicken, pour the sauce mixture in and bring to a boil for about 1 minute, stirring constantly.

Reduce the heat to medium-low and add in the asparagus and the chicken thighs.

Cover and simmer about 10 minutes or until chicken is cooked through. Serve and enjoy.

Ingredients

For the chicken:

For the sauce:

  • 3/4 cup heavy cream

  • 2 Tablespoons butter, melted
  • 2 teaspoons minced garlic
  • 1/2 tablespoon of dried chives
  • 1 teaspoon fresh parsley
  • 1/8 cup shredded Parmesan cheese
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1/2 pound of fresh asparagus

Okay, I would like to make for supper this evening. Reading the instructions by covering the pan I would turn the great crispy skin into a soft chewy skin which my husband would not like. Any suggestions how to keep the skin nice and crispy? Thank you

Hi Dottie, I have not tried making this recipe other how it's written. You could try searing the chicken as written and then move it into a 400F oven for about 30 minutes, or until the chicken reaches an internal temperature of 165F. And at the same time, make the asparagus and cream sauce in a separate pan. I hope that helps, thanks :)
