Roasted Green Beans with Bacon

Roasted Green Beans with Bacon have tender crisp green beans coated in garlic and olive oil topped with crunchy Panko breadcrumbs, Parmesan cheese, and bacon.

This small batch baked green beans recipe serves 2 and makes a delicious and impressive side dish.

How to trim green beans

Trimming green beans is pretty easy.  Place the beans on a cutting board with the stems lined up.  Using a knife, cut across the top of all the beans until the stems are removed.  Alternately, you may be able to purchase green beans that have already been washed and trimmed at the store.

How to make Roasted Green Beans

Preheat oven to 425 degrees F.

Place the beans in a bowl and add 1/2 tablespoon olive oil, minced garlic, salt and pepper. Toss to coat.

Spray a small baking sheet with non-stick spray and line the beans close together on it in a row.

Top with the Panko breadcrumbs.

Sprinkle on the shredded parmesan cheese.

Cut the bacon into 1 inch pieces and layer on top of the cheese.

Drizzle with remaining 1/2 tablespoon olive oil.

Bake for 15 – 20 minutes or until bacon is cooked to desired doneness.

Transfer beans to a serving platter or two dinner plates and enjoy!

  • 1/4 teaspoon pepper
  • 1/8 cup panko breadcrumbs (not fine bread crumbs)
  • 1/8 cup shredded Parmesan cheese
  • 2 slices bacon

Instructions

  1. Preheat oven to 425 degrees F.

Great recipe but changed 2 items. I used frozen green beans cause that is what I had on hand and baked them in my air fryer which was a lot faster. Baked them at 425 for 8 minutes on one side, turned them over and baked them for another 5 minutes. Yum!!!!! Love that you have recipies for 2 as there is only me. Thank you so much.
