How to make Spinach Artichoke Chicken Pasta:
Sprinkle the chicken on both sides with salt and pepper.

Dice the chicken into bite sized pieces.

Drain and chop the artichoke hearts.

Melt the butter in a medium skillet over medium heat. You will need a lid in a later step.
Cook and stir the chicken cubes in the butter about 2 minutes or just until browned.

Add the spinach leaves, artichokes, milk, sour cream, mayonnaise, cream cheese, Parmesan, mozzarella, and the pasta. Stir gently until combined.

Lower the heat to medium low, cover and cook, stirring occasionally, about 15 – 20 minutes or until the chicken and pasta are cooked through.

Add salt and pepper to taste, if desired, serve and enjoy.

- 1/2 lb boneless skinless chicken

- 4 oz baby spinach leaves
- 7 oz artichoke hearts (in water)
- 1 1/4 cup whole milk
- 1/3 cup sour cream
- 2 Tbsp mayonnaise
- 2 oz cream cheese (softened)
- 1/2 cup shredded Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1/2 cup uncooked pasta (any shape)
