How to make Spinach Artichoke Chicken Pasta

Sprinkle the chicken on both sides with salt and pepper.

Dice the chicken into bite-sized pieces.

Drain and chop the artichoke hearts.

Melt the butter in a medium skillet over medium heat. You will need a lid in a later step.

Cook and stir the chicken cubes in the butter for about 2 minutes or just until browned.

Add the spinach leaves, artichokes, milk, sour cream, mayonnaise, cream cheese, Parmesan, mozzarella, and pasta. Stir gently until combined.

Lower the heat to medium-low, cover, and cook, stirring occasionally, for about 15 – 20 minutes or until the chicken and pasta are cooked through.

Ingredients

  • 1/2 lb boneless skinless chicken
  • Salt and pepper to taste
  • 1 Tbsp butter
  • 4 oz baby spinach leaves
  • 7 oz artichoke hearts (in water)
  • 1 1/4 cup whole milk
  • 1/3 cup sour cream
  • 2 Tbsp mayonnaise
  • 2 oz cream cheese (softened)
  • 1/2 cup shredded Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup uncooked pasta (any shape)
