These Individual Cheddar Meatloaves are filled with gooey cheddar, ground beef, oats, egg, and onion with a sweet barbecue topping. You could add a little heat to the barbecue by adding a dash of cayenne to it.
This recipe is moderately low-carb, but not necessarily by Keto extreme low-carb guidelines.

How to make mini Barbecue Cheddar Meatloaf
Preheat the oven to 350 degrees F.
Dice the onion into small pieces.
In a medium bowl combine the ground beef, oats, salt, cheese, onion, and egg. Mix well.
Shape the beef mixture into 2 small oval loaves. Place the loaves onto a small sheet pan or shallow baking dish lined with parchment paper or tinfoil sprayed with non-stick spray. Click here for a small baking sheet.
In a small bowl combine the brown sugar, mustard, and ketchup.
Spread the homemade BBQ sauce over the tops of the loaves.
Bake in the preheated oven for 30 minutes. Serve and Enjoy

Wow, this is truly the best meatloaf I’ve ever had. I think the oatmeal adds some richness and creaminess that makes it so outstandingly delicious. I love that it’s so easy to scale up, too. I ended up with enough meat for 6 loaves and scaled everything up but only used 2 eggs, and it was still perfect, great to make extra and freeze or serve individually, and I can’t wait to have one of them as a leftover meatloaf sandwich tomorrow. Thank you for sharing this incredible recipe!
