This easy Ham Salad Sandwich recipe combines leftover ham, hard-boiled egg, mayonnaise, sweet pickle relish, mustard, celery, onion and seasonings.
Ham salad spread is perfect for that leftover holiday ham but you can also use ham steaks.
Hard boiled egg is optional in this recipe. If you plan to use it and don’t have any made up ahead of time, the time to make this recipe will increase. Also, if you want a little kick, try adding horseradish to the ham salad mixture.
It is super quick, ready in just 5 minutes but for best flavor plan to chill in the fridge for 1 – 2 hours.
This small-batch recipe makes a great appetizer, lunch, dinner, or date night meal for two.

Reader Cathie says "Hi Zona; Thanks for all these wonderful recipes. I've been struggling with cutting down our recipes for just us two. I saw your ham salad sandwich the other day and I was reminded of when we were kids my mom substituted bologna for half of the ham as a cost saving measure. I still prefer the flavor to this day. Also, for a nutty twist, make your ham salad and add a bit of peanut butter to it. I'd start small and add to taste because it makes a big difference. It's a delicious surprise (if you can tolerate peanuts, that is.) Have a wonderful summer. --Cath, a fan."
