Grilled French Onion Chicken Sandwiches

These Grilled French Onion Chicken Sandwiches have juicy grilled chicken topped with melted Swiss cheese, caramelized onions, and fresh baby spinach on a lightly toasted deli sandwich bun.

The chicken can also be pan fried or broiled if you would rather not grill it.

How to make Grilled French Onion Chicken Sandwiches:

Slice the onion and separate into rings.

In large skillet, heat the oil over medium-low heat.

 

Add onion, sugar, onion powder, and garlic powder and cook about 25 minutes or until onions are caramelized, stirring frequently.

Turn the heat to low and cover to keep warm.

 

Preheat the grill for direct grilling over medium-high heat.

 

Place the two pieces of chicken between two sheets of plastic wrap and pound flat with a meat mallet. Click here for a meat mallet.

Spray the chicken with nonstick spray.

 

Transfer the chicken to the hot grill rack.

 

Close the lid and cook about 5 minutes.

Optional – place the sandwich rolls on the grill to toast the insides just until lightly browned. Move them to the top warming rack to keep warm while the chicken finishes cooking.

 

Flip the chicken over and cook another 5 minutes or until chicken loses its pink color throughout and internal temperature reaches 160 degrees F (71.11 C).

 

Place the Swiss cheese slices on top of the chicken pieces.

Close the lid and cook 1 to 2 minutes or until cheese is melted and golden brown.

 

Assemble the sandwiches using sandwich buns, spinach, chicken with Swiss cheese and caramelized onions.

  • 2 Tablespoons extra virgin olive oil
  • 1 small yellow onion
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 2 (4 oz each) boneless skinless chicken filets
  • Nonstick cooking spray
  • 2 slices Swiss cheese
  • 2 hamburger or deli sandwich buns
  • 1 cup baby spinach
