These individual Green Chile Chicken and Rice Casseroles are bold, super easy, and flavorful. Tender juicy chicken, rice, and creamy diced green chile sauce are smothered in a layer of melted Monterey Jack cheese.

This Mexican dish makes a great lunch, dinner, or romantic date night meal for two.

The boneless chicken can be left whole or diced into bite sized pieces. If you choose to dice the chicken it should only need about 35 minutes baking time.

How to make Green Chile Chicken and Rice Casserole:

Preheat the oven to 375 degrees F (190 C).

Spray two 18.6 ounce oven safe baking dishes with non-stick cooking spray. Click here for 18.6 ounce oven safe baking dishes.

Layer the rice in the bottom of the two baking dishes, divided evenly.

Pour the chicken stock over the rice in each baking dish, divided evenly. Set aside.

In a medium bowl, mix the sour cream (or cream cheese), garlic powder, cumin, salt and pepper until combined.

Stir in the green chiles until evenly mixed.

Place one boneless chicken in each baking dish on top of the rice and chicken stock. Chicken can also be diced and layered over the rice.

Cover the boneless chicken with the sour cream and green chili mixture, divided evenly.

Sprinkle the Monterey jack cheese over the contents in each dish, divided evenly.

Bake on the middle rack for 35 – 45 minutes or until chicken is cooked through and the juices run clear.

Garnish with chopped fresh parsley or green onion if desired.

Ingredients

  • 1/2 cup uncooked rice (any kind)
  • 1 cup chicken stock
  • 1/2 cup sour cream, or 4 oz softened cream cheese
  • 4 oz can diced green chiles
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cumin
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 (4 oz ea.) boneless skinless chicken pieces (whole or diced)
  • 1/2 cup shredded Monterey jack cheese, or Mexican blend cheese
  • Chopped fresh parsley or green onion (for garnish - optional)

Instructions
