How to make Pork Chops and Au Gratin Potatoes
For the Onions and Au Gratin potatoes
Spray a 4 quart crockpot slow cooker with non-stick cooking spray. Click for a 4 quart slow cooker.
Slice the potato into 1/4 inch slices and slice the onion into rings.

Layer half of the onions into the bottom of the crockpot.

Add the potato slices and sprinkle with salt and pepper to taste.

Top with the other half of the onions.

In a small sauce pan, melt the butter over medium heat. Click for a small sauce pan.
Mix in the flour and salt, and stir constantly with a whisk for one minute.

Stir in milk. Cook until mixture has thickened.
Add in the cheese all at once, and continue stirring until melted, about 30 to 60 seconds.

Pour the cheese sauce over the potatoes and onions in the crockpot.

For the pork chops
In a small bowl mix the brown sugar, paprika, salt, and pepper.

Rub all over both sides of the pork chops.

Place the two pork chops over top of the cheese sauce.

Cover the slow cooker and cook on low for 4 – 5 hours or until cooked through.
Transfer the pork chops to dinner plates.
For thickening the sauce
Use a slotted spoon and transfer the potatoes to the dinner plates, leaving the sauce in the crockpot.
In a small bowl mix the cornstarch and just enough water to dissolve the cornstarch into a liquid slurry.
While stirring with a spoon or whisk, pour the cornstarch mixture into the cheese sauce. Stir for about 30 seconds until sauce thickens.
Spoon the sauce over the potatoes.
Garnish everything with parsley if desired.
