How to make Creamy Chicken Florentine
Step 1 - Preheat the oven to 375 degrees F.
Step 2 - Lightly coat an 8x8 baking dish with olive oil.
Step 3 - In a large mixing bowl, combine the mozzarella, sour cream, ¼ cup of Parmesan, oregano, basil, garlic powder, salt and pepper.
Step 4 - Stir in the baby spinach leaves until coated.
Step 5 - Lay the chicken breasts in the casserole dish and spread the creamy sauce mixture over the chicken.
Step 6 - Add the remaining Parmesan cheese on top of the spinach mixture.
Step 7 - Bake in the preheated oven for 25-35 minutes, or until the internal temp of the chicken reaches 165 degrees F.

Easy & Wonderful Recipe. I used leftover shredded chicken instead of chicken breast. Also added a bit of ranch seasoning & a dab of cream cheese. Highly recommend making - its a keeper!
