How to make Chinese Mushroom Chicken
Step 1 – Slice or dice the chicken breast and mushrooms on a cutting board.
Step 2 – Transfer the sliced chicken to a large bowl. Add the marinade ingredients. Mix well and set aside to marinate for at least 20 minutes.
Step 3 – Combine the stir-fry sauce ingredients in a separate small bowl.
Step 4 – Heat a large nonstick skillet on medium-high heat with 1 teaspoon of cooking oil. Once the oil is hot, fry the chicken until cooked through, about 2-3 minutes. Remove and set aside.
Step 5 – Reduce the heat to medium and add 1 teaspoon of cooking oil. Fry the mushrooms for 1 minute.
Step 6 – Pour in the stir-fry sauce, and mix with the mushrooms. Allow this to simmer and thicken.
Step 7 – Once the sauce is thickened, toss in the cooked chicken. Serve and enjoy!

Store leftovers in an airtight container in the fridge for 4-5 days.

Chinese Mushroom Chicken
Ingredients
- ½ pound skinless boneless chicken breasts
- 4 ounces button mushrooms
- 2 teaspoons vegetable oil
For the chicken marinade:
- ½ Tablespoon regular soy sauce
- ½ Tablespoon vegetable oil
- 1 Tablespoon cornstarch
- ⅛ teaspoon black pepper
- ¼ teaspoon baking soda
For the stir-fry sauce:
- 4 teaspoons jarred minced garlic
- 1 teaspoon ground ginger
- 1 Tablespoon soy sauce
- 1 Tablespoon oyster sauce
- ½ Tablespoon cornstarch
- 2 Tablespoon brown sugar
- 1 teaspoon toasted sesame oil
- ½ cup chicken broth
Instructions
- On a cutting board, slice or dice the chicken and mushrooms.
