Chinese Mushroom Chicken is delicious with tender chicken stir-fried with hearty button mushrooms in a delicious savory sauce. This chicken dish is ready in just 30 minutes! We like to serve this over white rice, brown rice, or homemade fried rice.
On a cutting board, slice or dice the chicken and mushrooms.
Transfer the sliced chicken to a large bowl. Add the marinade ingredients. Mix well and set aside to marinate for at least 20 minutes.
In a separate small bowl, combine the stir-fry sauce ingredients.
In a large nonstick frying pan on medium-high heat, add 1 teaspoon of cooking oil. Once the oil is hot, fry the chicken until cooked through, about 2-3 minutes. Remove and set aside.
Reduce the heat to medium heat and add 1 teaspoon of cooking oil. Fry the mushrooms for 1 minute.
Pour in the stir-fry sauce, and mix with the mushrooms. Allow this to simmer and thicken.
Once the sauce is thickened, toss in the cooked chicken. Serve and enjoy!
Notes
You can use skinless boneless chicken thighs instead of chicken breasts.
You can use dark soy sauce or light soy sauce.
Store leftovers in an airtight container in the fridge for 4-5 days.
