Chicken Oriental Salad for Two Recipe - perfect refreshing dinner for two

Ingredients (Choose US or Metric)
For the Salad
  • 2 breaded boneless chicken breasts from a package
  • salt and pepper to taste
  • 16 ounce bag Romaine lettuce
  • 8 ounce can mandarin oranges drained
  • 1/4 cup almonds sliced or slivered
  • 1/4 cup chow mein noodles
Oriental Dressing
  • 1/4 cup sugar
  • 2 Tbsp Cider Vinegar
  • 1/4 c Mayonnaise
  • 2 tsp Dijon mustard
  • 1/4 tsp Canola oil
Instructions
  1. Bake the chicken according to the package directions. Allow to cool for a couple of minutes. Cut into strips or dice into cubes.

  2. While the chicken is baking, in a small bowl, mix together the mayo, Dijon mustard, oil, honey (or sugar), and vinegar. Whisk until well combined.

  3. Divide the bag of lettuce into two bowls. Then top with the mandarin oranges, almonds, chow mein noodles, and cooked chicken. Drizzle dressing all over the salad, serve and enjoy.
