Hi Zona, I want to make these for a girls brunch. I'm planning on making them in ramekins for individual servings. Should I adjust baking time.

Hi Sandy, A good rule of thumb is to set your timer for half the amount of time called for in the original recipe. In this case I would start checking for doneness around 15 minutes to be safe.

Fantastic recipe where I won’t have to eat an entire hash brown casserole for 5 days! I’m a one-person household and this was eaten in 3 days. I did cut the soup amount in half because my first time making this it was too soupy for my taste. Absolutely my go to recipe when I’m stuck for a side dish. You have helped me so much, Zona, with adapting large meal recipe quantities. I appreciate your help. Thanks.

Hi Ryan, I'm so glad you were able to make this recipe work to your taste. We don't want to eat anything for 5 days either, that is the exact reason we started creating smaller meals. You are welcome and thank you for the lovely comment :)

Thanks for this posting! I miss my funeral potatoes but don't need a vat of them anymore, for 2 people. Love getting your recipes! I made the chicken pot pies and the chicken parmesan. Even bought the 2 18 oz. casserole dishes for us. Look forward to all your emails!
