This Chicken and Broccoli Casserole with Mayo is delicious, packed with tender chicken, cheese, and broccoli florets. The creamy sauce flavor is very close to homemade Alfredo.
This recipe is moderately low-carb, but not necessarily by Keto extreme low-carb guidelines.

broccoli
cream cheese
sour cream
mayonnaise
garlic salt
onion powder
basil
paprika
thyme
shredded cheese
Substitutions
You can use fresh broccoli florets or frozen broccoli. To switch it up, try green beans, diced cauliflower, or cauliflower rice.
You can use boneless chicken breasts or boneless chicken thighs. You could also use cooked chicken, leftover chicken, or rotisserie chicken and lower the bake time to 30-35 minutes.

How to make Chicken Broccoli Casserole
Step 1 – Preheat your oven to 375 degrees F. and spray two 18.6-ounce oven-safe casserole dishes with non-stick cooking spray.
Step 2 – On a cutting board, cut the chicken into small pieces.
Step 3 – In a large or medium bowl, combine all ingredients except the shredded cheese.
Step 4 – Pour the mixture into each baking dish, divided evenly.
Step 5 – Bake for 40 minutes.
Step 6 – Remove from the oven, add the shredded cheese on top of the chicken casserole, and bake for 5 more minutes.

- 2 ounces cream cheese, softened
- ¼ cup sour cream
- ⅛ cup mayonnaise (or light mayonnaise)
- ¼ teaspoon garlic salt
- ¼ teaspoon onion powder
- ⅛ teaspoon basil
- ⅛ teaspoon paprika
- ⅛ teaspoon thyme
- 1 cup shredded cheese (like Monterey Jack, cheddar cheese, Colby, etc.)
Instructions
- Preheat oven to 375 degrees F. and spray two 18.6-ounce oven-safe dishes with non-stick cooking spray.

- In a large bowl, combine all ingredients except the shredded cheese.

I replaced chicken with 2-5 oz cans of solid white tuna. One of my favorite meals is tuna casserole so this was a great substitute for a low carb version.

Thank you for this wonderful recipe. I need a low sodium meal and this is so delicious. The seond time I made the recipe it was dryer than the first. I wonder if adding a little water is OK?

Will it still turn out the same with fresh broccoli,as far as water content or do you need to add water?

Hi Tee, you can substitute fresh broccoli for the frozen broccoli. Fresh broccoli will yield a bit longer cooking time than frozen. Also, the size you cut your broccoli will affect its cooking time as well. If you like your broccoli more on the softer side, cook it longer. Thanks for your question :)
