Equipment
Ingredients
- 8 ounces diced boneless chicken
- 2 cups chopped broccoli (fresh or frozen)
- 2 ounces cream cheese, softened
- ¼ cup sour cream (or greek yogurt)
- ⅛ cup mayonnaise (or light mayonnaise)
- ¼ teaspoon garlic salt
- ¼ teaspoon onion powder
- ⅛ teaspoon basil
- ⅛ teaspoon paprika
- ⅛ teaspoon thyme
- 1 cup shredded cheese (like Monterey Jack, cheddar cheese, Colby, etc.)
Instructions
- Preheat the oven to 375 degrees F. and spray two 18.6-ounce oven-safe dishes with non-stick cooking spray.
- On a cutting board, cut the chicken into bite-sized cubes.
- In a large bowl, combine all ingredients except the shredded cheese.
- Pour the mixture into each prepared dish, divided evenly.
- Bake for 40 minutes.
- Remove from the oven, top with the shredded cheese, and bake for 5 more minutes.
Notes

I replaced chicken with 2-5 oz cans of solid white tuna. One of my favorite meals is tuna casserole so this was a great substitute for a low carb version.

Thank you for this wonderful recipe. I need a low sodium meal and this is so delicious. The seond time I made the recipe it was dryer than the first. I wonder if adding a little water is OK?
