How to make individual Cheesy Ham Spinach Omelets
Preheat the oven to 350 degrees F.
Slice the mushrooms, and green onions. Shred the cheese.
Whisk together the eggs, milk, and salt in a large bowl.
Stir in the ham, Cheddar Jack cheese, spinach leaves, mushrooms, and onions.
Spray two 20-ounce baking dishes with non-stick spray.
Pour the egg mixture into the two dishes, divided evenly.
Place the two baking dishes on a sheet pan.
Bake for 45 minutes, until eggs are cooked and omelets are set.
Serve on trivets to protect the table or countertop from the heat.
Eat carefully, the omelets will be very hot inside and the baking dishes will also be very hot.
