Prepare the shrimp, drain, and pat dry with paper towels. If you didn’t buy shrimp that is peeled, deveined, and tails removed, you will need to do those steps and it will add more time to the preparation.

Place the raw shrimp on their sides curled in a circle and add a mozzarella pearl on top of each one.

Wrap the raw bacon halves around the shrimp and cheese and place them on the prepared baking sheet in a single layer.

Using a pastry brush, spread the apricot sauce over the top of each bacon shrimp and bake.
