This recipe for two makes a great appetizer, lunch, or amazing date night dinner.
Fajita Nachos can also be made with chicken, pork, shrimp, lamb, salmon, other types of fish, and other cuts of beef, as well as vegetables instead of meat. Cooking times will vary.

How to make the Steak Nachos
Preheat the oven to 350 degrees F (180 C).
Cut the onion and bell peppers into large chunks. Dice the green onion, if using.
Heat the oil in a cast iron skillet over medium heat. Click for a cast iron skillet.
Season the steak with a little of the fajita seasoning on both sides.
Cook the steak in the skillet for about 5 – 7 minutes on each side, or until it is done to your liking.
Transfer the steak to a cutting board and set aside to rest.
Place the bell peppers and onions in the same skillet. Stir-fry for about 5 minutes, or until tender-crisp.
Add the water to the skillet. Sprinkle in the fajita seasoning. Stir and combine all together until the sauce thickens.
Turn off the heat. Drizzle the lime juice over the cooked fajita mixture. Stir to incorporate.
Sprinkle in the cilantro.
Slice the steak into thin strips and add back into the pan. Stir to coat.
Place tortilla chips spread out in a layer on a baking sheet, or oven-safe platter, sprayed with non-stick spray. Click for an oven-safe platter.
Top the chips with the steak fajita mixture and the shredded cheese.
Bake until the cheese is melted, about 5 minutes.
Garnish with sour cream and green onion, if desired. Dig in!!!

This looks awesone definetly going on the list for next week. We have a local restaruant that does something simlar and serves it over a baked russet potato cut into medalions. I'm thinking I maty give that a try or perhaps airfried tots.
