Shrimp Gnocchi Recipe

Ingredients
- 8 ounces potato gnocchi
- 4 ounces cream cheese
- 3 Tablespoons butter
- ½ cup milk (or heavy cream)
- ¼ cup shredded Parmesan cheese (or freshly grated Parmesan cheese)
- 1 teaspoon jarred minced garlic
- Salt and pepper (to taste)
- ½ pound shrimp, thawed (I buy peeled, deveined, and tails removed)
- Optional garnish – 1/2 Tbsp chopped fresh parsley
Instructions
- Cut the cream cheese into cubes.
- Heat a large, high-sided skillet over medium heat. Add the gnocchi and butter. Fry for 10 minutes, stirring occasionally.
- Add the cream cheese and stir for a couple of minutes until melted. At this stage, it won't have a smooth and creamy texture yet.
- Incorporate the milk, Parmesan cheese, minced garlic, salt, and pepper. Stir and cook for about 2 minutes or until the cheese melts, thickens, and achieves a smooth consistency.
- Place the shrimp into the creamy Alfredo sauce. Cook on medium heat for 3 minutes, flipping the shrimp halfway. Once cooked, the shrimp will appear opaque and pink.
- Optionally, garnish with freshly chopped parsley. Serve and enjoy!
