Ingredients

  • 8 ounces potato gnocchi
  • 4 ounces cream cheese
  • 3 Tablespoons butter
  • ½ cup milk (or heavy cream)
  • ¼ cup shredded Parmesan cheese (or freshly grated Parmesan cheese)
  • 1 teaspoon jarred minced garlic
  • Salt and pepper (to taste)
  • ½ pound shrimp, thawed (I buy peeled, deveined, and tails removed)
  • Optional garnish – 1/2 Tbsp chopped fresh parsley

Instructions
 

  • Cut the cream cheese into cubes.
  • Heat a large, high-sided skillet over medium heat. Add the gnocchi and butter. Fry for 10 minutes, stirring occasionally.
  • Add the cream cheese and stir for a couple of minutes until melted. At this stage, it won't have a smooth and creamy texture yet.
  • Incorporate the milk, Parmesan cheese, minced garlic, salt, and pepper. Stir and cook for about 2 minutes or until the cheese melts, thickens, and achieves a smooth consistency.
  • Place the shrimp into the creamy Alfredo sauce. Cook on medium heat for 3 minutes, flipping the shrimp halfway. Once cooked, the shrimp will appear opaque and pink.
  • Optionally, garnish with freshly chopped parsley. Serve and enjoy!
