Roasted Chicken and Brussels Sprouts is one of our favorite chicken recipes. A garlic thyme sauce coats tender Brussels sprouts topped by crispy bacon-wrapped boneless chicken. Garnish with fresh parsley if desired. Ready in about 35 minutes!
Place the Brussels sprouts in an even layer in the bottom of an 8x8 inch baking dish.
Drizzle the vegetables with olive oil and season with salt and pepper.
Whisk together the minced garlic, lemon juice, chicken broth, and thyme. Pour over the Brussels sprouts into the dish.
Sprinkle each chicken breast with salt and pepper then wrap with bacon. Place chicken with the bacon seam side down on top of the sprouts.
Bake for 25-30 minutes or until the internal temperature reaches 165 degrees F. If you want the bacon to be extra crispy, switch the oven to broil and allow it to cook under the broiler for a few extra minutes.
