Ingredients

  • ½ pound boneless skinless chicken
  • Salt and pepper (to taste)
  • 1 Tablespoon butter
  • 4 ounces baby spinach leaves
  • 7 ounces artichoke hearts (in water)
  • 1 ¼ cup whole milk
  • cup sour cream
  • 2 Tablespoon mayonnaise
  • 2 ounces cream cheese (softened)
  • ½ cup shredded Parmesan cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup uncooked pasta (any shape)

Instructions
 

  • Sprinkle the chicken on both sides with salt and pepper.
  • Dice the chicken into bite sized pieces.
  • Drain and chop the artichoke hearts.
  • Melt the butter in a medium skillet over medium heat.  You will need a lid in a later step.
  • Cook and stir the chicken cubes in the butter for about 2 minutes or just until browned.
  • Add the spinach leaves, artichokes, milk, sour cream, mayonnaise, cream cheese, Parmesan, mozzarella, and pasta. Stir gently until combined.
  • Lower the heat to medium low, cover and cook, stirring occasionally, for about 15-20 minutes or until the chicken and pasta are cooked through.
  • Add salt and pepper to taste, if desired. Serve and enjoy.
