Spinach and Artichoke Chicken Pasta Recipe
Equipment
Ingredients
- ½ pound boneless skinless chicken
- Salt and pepper (to taste)
- 1 Tablespoon butter
- 4 ounces baby spinach leaves
- 7 ounces artichoke hearts (in water)
- 1 ¼ cup whole milk
- ⅓ cup sour cream
- 2 Tablespoon mayonnaise
- 2 ounces cream cheese (softened)
- ½ cup shredded Parmesan cheese
- ½ cup shredded mozzarella cheese
- ½ cup uncooked pasta (any shape)
Instructions
- Sprinkle the chicken on both sides with salt and pepper.
- Dice the chicken into bite sized pieces.
- Drain and chop the artichoke hearts.
- Melt the butter in a medium skillet over medium heat. You will need a lid in a later step.
- Cook and stir the chicken cubes in the butter for about 2 minutes or just until browned.
- Add the spinach leaves, artichokes, milk, sour cream, mayonnaise, cream cheese, Parmesan, mozzarella, and pasta. Stir gently until combined.
- Lower the heat to medium low, cover and cook, stirring occasionally, for about 15-20 minutes or until the chicken and pasta are cooked through.
- Add salt and pepper to taste, if desired. Serve and enjoy.
