How to make Mini Apple Pies

Preheat your oven to 375 degrees F (190 C).

On a lightly floured surface, unroll one pie crust and with a knife, trace around a 4-7/8 inch upside-down foil tart tin. You should get 3 circles out of one crust. Click for 4-7/8 inch foil tart tins.

Re-roll the crust and cut out 2 more circles. These will probably be thinner than the first 3 circles.

Repeat steps 2 and 3 with the other three rolls of pie crust. You should have 20 circles when finished.

Choose the 10 thickest circles and roll them larger to increase their size by about 1/3.

Lightly press these larger circles into the bottoms and up the sides of the 10 tart tins. Place them on two baking sheets.

Set the other 10 circles aside for the tops of the pies. Do not roll them larger.

In a large bowl, mix the pie filling with the cinnamon and caramel topping until well combined.

Place the remaining 10 circles of pie crust on top of the pies. Press the edges with a fork to seal. You could also add extra shapes cut out from the left-over pie dough at this point if you want to, but if you wrap them with ribbons and forks the shapes may not be seen.

Have you done these by blind baking the crust first?

Thank you!

Hi Jenny, I have not made these by blind baking the crust. If you want to try that method you would probably be need to fill each crust with some pie weights for pre-baking them. crazyforcrust.com has a great guide on "How to Blind Bake a Pie Crust" if you need better instruction on it. Thanks for your question :)
